Scale
Chicken and Vegetables
- 7 chicken breasts, trimmed of fat and cut into 1-inch pieces
- 1 yellow bell pepper, cut into squares
- 1 red bell pepper, cut into squares
- 1 large red onion, peeled and cut into chunks
Seasonings and Sauces
- 1 tbsp salt
- 1 tbsp Mrs. Dash Seasoning
- 1 tbsp Grill Mates Smokehouse Maple Seasoning
- ½ tsp ground black pepper
- 1½ cups sweet BBQ sauce
- ½ cup BBQ sauce (for brushing during grilling)
Instructions
- Prep the Ingredients: Trim any fat from the chicken breasts and cut them into 1-inch pieces. Rinse the chicken pieces and drain well.
- Mix Seasonings: On a large plate, combine salt, Mrs. Dash Seasoning, Grill Mates Smokehouse Maple Seasoning, and ground black pepper thoroughly.
- Prep the Vegetables: Wash and cut the yellow and red bell peppers into squares. Peel and chunk the red onion. Place all vegetables together with the chicken in a large bowl.
- Season and Marinate: Sprinkle the seasoning mix evenly over the chicken and vegetables. Add 1½ cups of sweet BBQ sauce and toss well to coat everything evenly. Cover the bowl and refrigerate the mixture for at least 6 hours to marinate and enhance flavor.
- Skewer the Ingredients: Thread the marinated chicken pieces and vegetables alternately onto metal skewers or wooden skewers that have been pre-soaked to prevent burning.
- Grill the Skewers: Preheat your grill to medium-high heat, then reduce to low heat. Place the skewers on the grill and cook for 15 minutes before flipping them to ensure even cooking.
- Brush with Sauce and Continue Grilling: Brush the skewers with ½ cup BBQ sauce, continue grilling for another 15 minutes, then flip again. Brush the other side with more BBQ sauce and grill for an additional 10-15 minutes until the chicken is fully cooked through and has a slight charred appearance.
- Serve: Remove the skewers from the grill and serve hot. These BBQ chicken skewers pair perfectly with your choice of sides for a delicious meal.
Notes
- For best results, marinate chicken and vegetables for a full 6 hours or overnight if possible to maximize flavor absorption.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- Ensure chicken is cooked thoroughly by checking that internal temperature reaches 165°F (74°C).
- You can customize the BBQ sauce based on personal preference for sweetness or spiciness.
- These skewers are great for outdoor grilling seasons and can be paired with coleslaw, grilled corn, or a fresh salad.
