Fruit Mixture

Coconut Base
- 7 oz coconut yogurt
- 7 oz coconut cream (or chilled canned coconut milk; see notes)
- 5 tablespoons pure maple syrup
- 1 teaspoon vanilla bean paste
Instructions
- Prepare the fruit mixture: In a blender, combine the passion fruit pulp, fresh mango chunks, and 2 tablespoons of pure maple syrup if using. Blend until smooth, ensuring a vibrant and consistent tropical fruit base for the popsicles.
- Mix the coconut base: In a large bowl, whisk together the coconut yogurt, coconut cream, 5 tablespoons of pure maple syrup, and vanilla bean paste until fully combined, creating a creamy, sweet coconut mixture.
- Combine mixtures: Gently fold the blended fruit mixture into the coconut base until evenly incorporated, maintaining a balance of creamy coconut and tropical fruit flavors throughout.
- Fill molds and freeze: Pour the combined mixture into popsicle molds, leaving a small gap at the top to allow for expansion. Insert sticks and freeze for at least 6 hours or until completely solid.
- Serve: To remove the popsicles easily, run the molds briefly under warm water. Enjoy the refreshing, tropical flavors as a perfect summer treat.
Notes
- If canned coconut milk is used instead of coconut cream, chill it beforehand to thicken.
