Ingredients
Scale
Sweet Potatoes
- 4 medium sweet potatoes
- 1 tablespoon olive oil
Turkey Taco Filling
- 1 pound ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced tomatoes or salsa
- 1/2 cup shredded cheddar cheese
Garnish
- Chopped fresh cilantro
- Lime wedges
Instructions
- Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes well and prick them a few times with a fork to allow steam to escape. Place the sweet potatoes on a baking sheet and roast them for 40 to 45 minutes, or until they are tender when pierced with a fork.
- Prepare Turkey Filling: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
- Cook Ground Turkey: Add the ground turkey to the skillet and cook, breaking it up with a spoon, until it is browned and fully cooked through, about 6 to 8 minutes. Stir in the chili powder, cumin, smoked paprika, salt, and black pepper to season the meat evenly.
- Add Vegetables: Mix in the black beans, corn, and diced tomatoes or salsa, cooking for another 2 to 3 minutes until everything is heated through and well combined.
- Assemble Stuffed Potatoes: Once the sweet potatoes are roasted, remove them from the oven and allow them to cool slightly. Slice each potato lengthwise and gently fluff the inside flesh with a fork to create a soft base for the filling.
- Fill and Melt Cheese: Spoon the turkey taco mixture generously into each potato. Sprinkle shredded cheddar cheese on top, then return the stuffed potatoes to the oven for 5 minutes to melt the cheese perfectly.
- Garnish and Serve: Remove the potatoes from the oven and garnish with freshly chopped cilantro and a squeeze of lime juice. Serve immediately while warm and enjoy your delicious healthy meal.
Notes
- Top with avocado slices, Greek yogurt, or hot sauce for extra flavor and creaminess.
- You can prepare the sweet potatoes and turkey filling ahead of time for quick assembly during busy evenings.
