Instructions

  1. Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes well and prick them a few times with a fork to allow steam to escape. Place the sweet potatoes on a baking sheet and roast them for 40 to 45 minutes, or until they are tender when pierced with a fork.
  2. Prepare Turkey Filling: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Cook Ground Turkey: Add the ground turkey to the skillet and cook, breaking it up with a spoon, until it is browned and fully cooked through, about 6 to 8 minutes. Stir in the chili powder, cumin, smoked paprika, salt, and black pepper to season the meat evenly.
  4. Add Vegetables: Mix in the black beans, corn, and diced tomatoes or salsa, cooking for another 2 to 3 minutes until everything is heated through and well combined.
  5. Assemble Stuffed Potatoes: Once the sweet potatoes are roasted, remove them from the oven and allow them to cool slightly. Slice each potato lengthwise and gently fluff the inside flesh with a fork to create a soft base for the filling.
  6. Fill and Melt Cheese: Spoon the turkey taco mixture generously into each potato. Sprinkle shredded cheddar cheese on top, then return the stuffed potatoes to the oven for 5 minutes to melt the cheese perfectly.
